Our Story

We didn’t choose the name Potato Project for it’s catchy ring or alliteration. 

We chose it because of the importance the role Potatoes have played in providing a sustainable food source in Europe & the World since the beginning of human existence. The earliest archaeologically verified potato tuber remains have been found at the coastal site of Ancón (central Peru ), dating to 2500 BC. Sailors returning from the Andes to Spain with silver presumably brought maize and potatoes for their own food on the trip. Historians speculate that leftover tubers (and maize) were carried ashore and planted: "We think that the potato arrived in Europe some years before the end of the 16th century, by two different ports of entry, first in Spain around 1570, and the second via the British Isles between 1588 and 1593.

At Potato Project we aim to elevate this humble spud into something that can be celebrated and seen not just as a side dish to the main course. In everything we do, from sourcing potatoes to importing our sauces & oil direct from the Netherlands, the goal is always to deliver the highest quality Frite for our customers. 

The process of turning a root vegetable into a Crispy Golden Frite is a labour of love, if you do it the right way of course. Our potatoes are delivered fresh everyday straight from our local farmer, we then wash and check each one individually for imperfections to make sure of AAA-grade quality. The next step is to cut into Frites, the choice was made to use a manual cutter with each potato cut-by-hand into 12mm fresh-cut-fries. Our Frites are then given a blanch at low temperature to par-cook and soften to break down the naturally occurring starch. They are then rested to cool for a minimum of 20 minutes. The final step is to finish the Frites to-order at a higher temperature to get the Crispy Golden exterior. Our goal with this process is to deliver crispy Frites with a soft interior while not loosing the essence of rich potato flavour. 

One of our unique offerings to elevate the Frites even further is by offering a variety of fresh-grated cheeses and toppings to enhance flavour combinations & customer experience. Some of these include: Parmesan Cheese, Crushed Peanuts, Spring Onion, Pancetta, Azores Cheese & Pickled Vegetables to name a few. We want our customers to be able to create their own unique custom Frites. 

Our motto is that “life is too short for bad fast food fries” we are not a fast food chain, each order is treated with care and attention to detail that you will not find at your local factory produced drive-thru.
